Turkey Cranberry Salad 

(for 4 people) 

8 oz sliced white meat turkey 
1/4 cup dried cran-raisins 
1 cup grape tomatoes 
1 peeled, chopped cucumber 
1/4 cup sliced red onion 
8 cups mixed lettuce 
4 Tb sliced almonds 
1/2 cup fat free raspberry dressing 
4 Tb balsamic vinegar 

Toss all ingredients together and serve Using turkey in salads, soups, and casseroles is a great way to make use of the leftovers.
